Albuquerque’s 2025 Hatch Green Chile Harvest is heating up!

Hey chile lovers! Do you smell the sweet, smoky aroma drifting through the air, everywhere you go? Chile roasting season is here, and 2025 is shaping up to be one fantastic harvest year.

As the Sandi Pressley team, we’ve called Albuquerque home for decades, and there’s nothing quite like this magical time of year when our entire city becomes infused with the sweet, charred scent of roasting green chiles.

Albuquerque’s obsession with green chile didn’t happen overnight. It’s been brewing for generations, a love affair that goes way back.

The story starts in the Hatch Valley, about 200 miles south of Albuquerque, where Spanish settlers first brought chile seeds in the 1500s.

Over the centuries, New Mexico’s unique high desert climate, rich soil, and abundant sunshine created the perfect storm for growing what many consider the world’s finest chile peppers.

The Hatch Chile Festival, founded in the early 1970s to celebrate the annual chile harvest from the Hatch Valley fields, has grown into a massive celebration that attracts over 30,000 visitors from around the U.S. and the world.

This year’s festival falls on Labor Day Weekend, August 30th and 31st, making it the perfect kickoff to what we know will be an incredible season.

But here’s the thing about Hatch chile – it’s not actually one type of pepper. Did you know that “Hatch Chiles” are not actually a type of pepper? Hatch Chile is a term used to describe peppers of several varieties grown in the area.

Actual varietal names might include “Big Jim,” “Joe Parker,” “Sandia,” and others. Each variety has its own personality, from mild and sweet to tongue-tingly, to fiery hot.

Have you heard of the great green vs red debate? Ah, the age-old question that’s sparked more passionate discussions around Albuquerque dinner tables than politics or the weather: green or red? Spoiler alert! There is no wrong answer, but everyone believes they’re right.

If you’re new to our city, you’ll quickly learn that this isn’t just a casual preference – it’s practically a statement of identity.

Green Chili is King at the beginning of the season, and it is made into rellenos, enchiladas, and stews. Later, the peppers ripen, turn red, and are dried to create the rich, earthy flavor we love in our red chile sauce.

Green chile tends to be brighter and grassier, with a fresh heat that immediately hits you. It’s perfect for stuffing into sopaipillas, smothering over breakfast burritos, or stirring into that pot of green chile stew that’ll warm you through our high desert winters.

On the other hand, red chile is green chile’s sophisticated older sibling. It’s been allowed to fully ripen on the plant before being dried, concentrating those flavors into something deeper and more complex. Red chile is almost like a fine fruity wine with a smoky flare, and a heat that builds slowly and lingers.

Festival Fever and Special Events
This harvest season is packed with incredible events celebrating our beloved Chilean culture. The big daddy of them all is the Hatch Chile Festival, held in Hatch, New Mexico, which marks a 50+ year tradition celebrating the local chile harvest. Picture this: The parade will kick off the festivities at 9 a.m. Saturday, August 30. Music will start at 11 a.m. both days on the Main Stage, and you’ll be surrounded by a vibrant celebration featuring a lively parade, live music, carnival rides, and artisan vendors, all centered around delicious dishes made with world-famous Hatch chiles.

Closer to home, we’re thrilled about the Bosque Chile Fest returning August 23, 2025, from 10 a.m. to 5 p.m. at Villa Hispana, Expo New Mexico! This all-day event will celebrate New Mexico’s favorite flavor, local chile, and our love for it. It’s the perfect chance to sample different varieties, watch roasting demonstrations, and pick up some tips from the pros.

And let’s not forget the magic that happens daily throughout our city. From August through September, a distinct, sweet, smoky smell saturates the town as Albuquerque fires up the roasters. Everyone is heating up their large steel cylinder cages rotating over an open flame. Grocery stores, farmers markets, and roadside stands all around Albuquerque are smooookin’. There’s something almost hypnotic about watching those roasters turn, the chiles tumbling and charring while that incredible aroma fills the air.

The farmers’ markets become absolute wonderlands during this time of year. The Downtown Growers Market, the Westside Market, and markets throughout the metro area overflow with vendors selling fresh roasted chiles by the bag, homemade salsas, and every chile product you can imagine. Many vendors offer roasting services on site so that you can take home perfectly roasted chiles ready for freezing or immediate use.
Living the Chile Life Year-Round

What makes Albuquerque special isn’t just that we love green chile – it’s that we’ve made it a way of life. Walk into any grocery store in town, and you’ll find green chile everything: bread, potato chips, chocolate, honey, and even green chile piñon coffee. We put it on pizza, stir it into mac and cheese, and even put it in our breakfast cereals (looking at you, green chile Cheerios!).
